Curious Southeast Asian Drinks #274: Egg Coffee
Properly known as Ca Phe Trung, this is one to be tasted to be believed. Egg yolks are beaten with milk and sugar till a smooth cream is formed, after which the mixture is placed into a water bath, increasing the body of the egg foam. Freshly brewed coffee is then poured into the mixture. Two distinct layers of black (Robusta beans only of course) and white will be created, and the concoction is to be served with a tablespoon. The topping is meant to be eaten first, before the coffee is drank like a chaser.
Now, on those frosty Christmas mornings, when you are craving something warming, eggy yet non-alcoholic, there is another recipe to go to instead of just eggnog ;)
